Bring large pot of salted water to a boil

Add pasta and cook according to package directions

Heat a 12 inch heavy duty skillet over medium heat

Add the oil, then the scallions

Cook stirring, until softened, about 1 minute

Add ginger & garlic and cook, stirring for 30 seconds

Crumble in the pork, stirring until it loses its pink color, about 4-5 minutes.

Stir in the Soy sauce, vinegar, chili paste and sugar and cook until just bubbling.

Add the peanut butter and stir until incorporated

Pour in the broth, stir and bring to a gentle simmer.

Cook for 2 minutes.

Reserve 1/2 cup pasta water

Drain the pasta and return in to the pot

Stir in the pork mixture.

Thin sauce, if necessary with the remaining pasta water

Divide among plates or bowls. Serve with lime wedge and top with cilantro. ENJOY!!
